Gluten-free, which makes it the ideal substitute in cooking and baking when flour and other starches and sticky should be avoided. Corn starch has twice the thickening power of flour. When a sauce, sauce, soup or stew recipe calls for flour, use half the amount of Fleischmann's corn starch to thicken.
